PASTRY STOUT

A Pastry Stout is an intentionally sweet stout, often made to mimic a specific dessert. 

 

Our Pastry Stout has a high ABV combined with a little sweetness. This is very much a dessert stout with caramel malt, vanilla, and cocoa nib, inspired by cookies. Unlike most pastry stouts, this brew does not contain lactose, making it completely vegan and lactose free.

INGREDIENTS - 10 GAL.

22lbs Maris Otter 

5.5lbs Golden Naked Oats

2.75lbs Pale Chocolate Malt

2.75lbs Carafoam  

1.4lbs Chocolate Malt

1.4lbs Chocolate Wheat 

1.4lbs Belgian Cara 45 

1.4lbs Simpsons Crystal Light 

1.4lbs Special B 

0.3lbs Carafa 3 Special 

1oz Nugget Hops - Boil 60min

2pkgs Wy1272

1 tbsp Madagascar Vanilla - Fermentation

1lb Cacao Nibs - Post Fermentation

Alcohol Content: 10% ABV

Bitterness: 17 IBU

MASH STEPS.

Mash In: 68°C, 60 minutes using reiterated mash method
